Fall Pumpkin Recipes

AUBURN, Ala. – When the leaves starts to change and the weather gets cooler, we know that it is time to get our fall recipes ready. A favorite ingredient to use in fall recipes is pumpkin. Whether it is pumpkin pie or a nontraditional recipe, everyone has a series of pumpkin recipes in their arsenal.

Pumpkin Bread

Ingredients

2/3 cup corn-oil margarine

2 cups sugar

3 eggs

2 cups mashed cooked pumpkin

2/3 cup water

3 ½ cups all-purpose flour

½ teaspoon baking powder

2 teaspoons baking soda

¼ teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

¾ cups raisins

½ cup chopped pecans

Butter flavor cooking spray

Directions

Cream margarine and sugar by beating margarine until soft and smooth and then gradually adding sugar, beating well after each addition. Continue beating until mixture is light and fluffy. Beat eggs and combine with mashed pumpkin and water. Add to creamed mixture. Beat until light and fluffy. Combine flour, baking powder, soda, salt, cinnamon and nutmeg until evenly mixed. Gradually add flour mixture to the pumpkin mixture, blending after each addition. Add raisins and pecans. Stir. Coat three 8 inch loaf pans with vegetable cooking spray. Divide batter evenly into pans. Bake at 350 degrees F for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Remove bread from pans and cool on wire racks.

Pumpkin Cake

Ingredients

Nonstick vegetable cooking spray

2 cups sugar

1 ½ cups vegetable oil

3 teaspoons ground cinnamon

1 teaspoon ground allspice

2 teaspoons baking soda

2 teaspoons baking powder

½ cup chopped pecans

2 cups mashed cooked pumpkin

3 cups all-purpose flour

4 eggs

2 teaspoons vanilla

Directions

Coat a 10 inch tube pan with cooking spray. In a large bowl, mix together sugar, oil, cinnamon, allspice, soda, baking powder and pumpkin. Beat on low speed for one minute. Mix pecans and flour together until pecans are well coated. Add flour mixture and eggs alternately to pumpkin mixture by adding one cup of flour and one egg at a time, beginning and ending with flour. Beat after each addition on low speed just enough to mix. Add vanilla and stir. Pour batter evenly into pan. Bake at 350 degrees F for 1 ¼ hours or until done. Cool in pan on wire rack for 20 minutes. After 20 minutes, remove from pan and finish cooling. Cut into wedges about one inch thick.

Baked Pumpkin  

Ingredients

1 4 pound pumpkin

Butter flavor vegetable cooking spray

Water

3 tablespoons sugar

1 teaspoon ground cinnamon

½ teaspoon ground allspice

2 tablespoons corn oil margarine

Directions

Wash pumpkin and cut into slices about one inch think. Peel slices and cut in small pieces. Coat a 1 ½ quart baking dish with cooking spray and add the pumpkin. Add enough water to barely cover bottom of dish. Sprinkle sugar and spices over top. Dot with margarine. Bake at 325 degrees F until tender. Check pumpkin while it bakes. If it bakes dry, add a little hot water.
